Belmopan, Belize — December 9, 2025 — The Belize Collection announces the opening of Casa de Maiz at Umaya Resort. Formerly known as Restaurante Laguna, Casa de Maíz pays homage to the foundation of Mesoamerican cuisine: corn.
Created by Executive Chef Rahim Melendez, the menu blends the flavors of Mexican street food with the authenticity of Mayan tradition. While the taco is the menu’s main hero, guests can expect to find dishes that honor traditional techniques and regional flavor.
“Casa de Maíz is a celebration where food, culture, and community meet,” said Chef Rahim. “Every dish tells a story of the hands that have cooked this food for generations.”
Known for a strong focus on fresh ingredients and farm to table cuisine, Casa de Maiz joins The Belize Collection restaurant portfolio along with the award-winning Grove House, Paddle House, Humo, and Don Tonito’s.
Casa de Maíz is open everyday, from 7:00 a.m. to 9:00 p.m., serving breakfast, lunch, and dinner. The restaurant welcomes both resort guests and the public.
